Buffalo Chicken Pizzadilla


1 Tbsp Avocado Oil

2 medium flour tortillas

Ranch Dressing or Blue Cheese Dressing

Chicken (breast or thighs, whichever you prefer)

Buffalo Wing Rub

1 clove garlic

bell pepper

diced tomatoes

mexican blend cheese

Manzanillo Mexican Seasoning or if you prefer it to be less hot, season with Ranch Dressing Seasoning

Rub chicken breast with Buffalo Wing Rub ahead of time to allow the seasonings to marry with the meat.  Cut chicken in small pieces and cook in avocado oil along with peppers and garlic.  Place one tortilla in 8 inch pan that can also go in the oven (I use cast iron).  Spread the dressing on top of tortilla. Cover with 1/2 the meat and pepper mixture and some cheese.  Top with the second tortilla and cook until cheese melts and tortilla is golden.  Meanwhile, preheat broiler.  When ready to flip, cover the pan with a large plate, flip and slide back into pan.  Top with more dressing ,meat, peppers, tomatoes, cheese and seasoning.  Broil until cheese is melted and bubbly.  Serve warm...Enjoy
