Olive oil offers a healthy alternative to butter or Crisco when baking. It can often even enhance flavors. Many recipes lend themselves to using olive oil as a substitute. Olive oil can be substituted for any recipe that calls for vegetable oil or canola oil. If your recipe calls for melted butter, use olive oil instead. When olive oil is used, you use less oil than butter. In addition to varietal olive oils, many flavored olive oils can be used in recipes.
Some of the flavored oils we love to use when baking are: Meyer Lemon, Blood Orange, Chocolate, Persian Lime, Clove, and Butter. We also love to use specialty oils like Walnut or Avocado as well.
This is an approximate conversion chart we use when baking with Olive Oils:

1 teaspoon..............3/4 teaspoon
2 teaspoons..........1 1/2 teaspoons
1 Tablespoon..........2 1/4 teaspoons
2 Tablespoons..........1 1/2 Tablespoons
1/4 cup..........3 Tablespoons
1/3 cup..........1/4 cup
1/2 cup ..........1/4 cup, plus 2 Tablespoons
2/3 cup ..........1/2 cup
3/4 cup..........1/2 cup, plus 1 Tablespoon
1 cup...........3/4 cup
